Oven Baked lamb
Many Cypriot Housewives cook this food only on sundays,
and the rest of the family look forward to this delicious dish.
It Is cooked either in the small oven, which is in the yard,
or in the big oven where they bake the bread. Its also good
however, cooked in the kitchens oven, for those who do not
have either of the two alternatives.


Ingredients
1 Leg of lamb weighing about 2 kilos
1kilo of large potatoes
1/2 cup of corn oil
1/2 of cooking fat
1/4 cup of lemon juice
1/2
kilo of ripe tomatos cut into big slices
1/2 cup of cold water
salt and pepper.
Peel potatos,wash, cut them in quarters and put them in a pie dish .Wash lamb,
drain, pour over it the lemon juice and put it among the potatoes. Add the corn
oil and the fat and sprinkle with salt and pepper . lay and cut the tomatoes on the
lamb and cook in the oven (medium) for about 1 1/2 - 2 hours you can leave it
3 hours aswell. Cut the leg in thing slices and accompany them with potatoes.
A salad of various vegetables goes very well with the " PSITO".
