" GREEN BROAD SALAD "



1 Kilo fresh green broad beans 
3 gloves garlic
3 stalks of fresh fennel
1/2 of olive oil
1/2 of vinegar
 salt to taste

   String all the beans and keep the tenderest shells. put them into a pan
   of boiling water for about 40 minutes . Strain and put them in a bowl.
   Crush the garlic with the salt and mix it into the beans . Beat the olive 
   oil and the vinegar and pour it over the beans. On top sprinkle the finely 
   chopped fennel serve cold garnished with black olives.
