all his life as a chef In the UK and in Cyprus.
The first receipe we will look at is " KOFTETHES"
Keftethes (keh-FTEH-thes) are savory Greek meatballs that are served
as an appetizer or meze(meh-ZEH).
The traditional recipe calls for frying the meatballs,
but I've found that this baked version is quite good and a bit healthier.

Fresh mince meat 1/2 kilo lean pork and 1/2 kilo lean beef
1 Onion to packet of mince meat, cut onion so it finely chopped
( maybe blend )
2 x eggs depending on how much meat, use 2 large of 4 small eggs
Salt and pepper
2x tbsp of olive oil
2x tsp of baking powder ( optional)
2x tbsp of cinnamon
Parsley and mint a few pinches.
Mix all together
Role into balls and start frying, make sure you oil is hot
before frying.
