"CHIRINA SOUVLAKIA"- SKEWED PORK




1 kilo of Pork (shoulder)
1 cup of oil
1 Large onion whole
1 tsb of cayene pepper
3 tomatoes cut into sloces
1/4 kilo pork fat (optional)
1/2 cup of lemon juice
1/2 finely choped onions
1/2 finely chopped onion

Half a lemon for each person and salt to taste

cute the meat into cubes about 1 sq inch. Do the same with the pork
fat . Put the meat and the Fat into the bowl , add 1/2 of the oil and stir
and leave for about 1 hour . pell the whole onion and cut into shapes of
a cross so as to obtain 4 pieces and seperate every leaf.Then thread 
onion and the fat on the spits so that the meat and the fat are seperated by
the onion leaves. 

Place the spits on the charcoal with a low heat and cook for about 1 hour untill
it is brown. and salt to the kebabs 15 minutes before they are ready. Mix the rest
of the oil with the lemon juice in a bowl and beat well , then brush over the kebabs 
every 20 seconds every time the spits are turned on the other side. 

Serve the kebabs hot and garnish each plate with mixed chopped onions,
parsley and cayene pepper. add tomatoes and cucambers cut into slices aswell
 as half a lemon.

Enjoy with friends and family with a nice cold drink in your hand.
